American Ham starts as the back leg of a local, pasture-raised Berkshire pig. It's cured in brine for 14 days and then slow-smoked over fruitwood. As versatile as it is delicious, it's at home on a charcuterie board next to prosciutto, or tucked in-between pieces of bread.
